Prof Jane Coad

Professor in Nutrition

Massey Institute of Food Science and Technology

My research focuses on mechanisms by which micronutrients affect health, particularly conditions involving inflammation and cardiometabolic health. Whilst my focus is on the cellular mechanisms involved, the research is strongly informed by, and potentially applicable to, public health nutrition.

I am co-director of the Massey University Vitamin D Research Centre (VDRC) which I established in 2010 with Pam von Hurst.  The prevalence and consequences of vitamin D insufficiency are emerging and significant; it is clear that vitamin D has a wide range of effects beyond its well-characterised effects on bone health.

My research on iron has ranged from investigation of cellular mechanisms to the development of novel infant foods with high iron bioavailability and human studies that investigate how apparently simple manipulations to the diet can affect iron status. My background in cell physiology and human nutrition has allowed the development of research strands which mean that an understanding of the physiological mechanisms by which dietary components act at the cellular level, using in vitro cell models, can be applied to practical research projects such as changing infant feeding practices in way that could have profound consequences.

We have established an in vitro intestinal crypt organoid model (“organoids” or “mini guts”) to study Inflammatory Bowel Disease which allows us to investigate the interactions between  intestinal tissue, dietary components and gut microbiota. 

Other research interests include type 2 diabetes, nonalcoholic fatty liver disease and nutrition in pregnancy and lactation.

I am author of international best-selling textbook, Anatomy and Physiology for Midwives (published by Elsevier).

In 2002, I established the Human Nutrition Research Unit (HNRU). THe HNRU is used for teaching and research. It has excellent facilities for nutritional assessment and running clinical studies. The co-directors of the HNRU are Marlena Kruger and Jane Coad.

I am the leader of the Human Nutrition expertise group at Massey University.

I am also the academic leader of the programmes in human nutrition at Massey - these include the BSc in Human Nutrition and postgraduate courses such as MSc in Human Nutrition. I act as course advisor for Human Nutrition students.

Teaching

I am the academic leader of the Human Nutrition programmes including the BSc in Human Nutrition. I provide leadership of the nutrition teaching group, for Albany and Manawatu, in many areas of our research-led teaching including development of new programmes and assessment strategies.

I have a significant input into teaching both nutrition and physiology papers in both Palmerston North and Albany, predominantly research-based teaching at level 300 and above. I lead the curriculum development aspects of the nutrition programmes which have a reputation for being based on a sound science foundation and being progressive in adoption of teaching technologies and support of students.
