Food Science and Technology

4th year projects

Food technology projects are a major research or development project completed by the student in their final year. Students are presented with a brief outlining a problem or opportunity from a food industry sponsor, then they develop a project plan that follow to meet agreed upon aims and objectives.

project.jpg The project can include research of a specific problem or the development of a new product or process. The student uses and integrates their skills gained from previous years study in research, product development, experimental design, process design, economic evaluation, project management and communication to complete the project.

A written report and an oral presentation is provided to the sponsor along with prototypes and other outputs that allow the sponsor to apply the results and recommendations generated by the student.

  • The development of Hash Browns - effect of potato variety, or effect of formulation.
  • The continued development of confectionary products containing high levels of protein.
  • The development of new products and processes from starch, controlling viscosity, starch protein materials, nutritious gels containing starch and protein.
  • The development of a high protein sweet snack bar with good flavour and taste.
  • Extraction, characterisation and utilisation of protein from legumes.
  • Extraction, characterisation and utilisation of starch from potatoes.
  • A novel technique for the extraction of lycopene from tomato waste products.
