The principal means by which we can assess forces that influence mixing and mass transfer within the lumen of the gut is to develop an understanding of the physical behaviour of the contents, e.g. the digesta at various points along the length of the gut. We also aim to understand patterns of wall movement that squeeze the contents and generate mixing.

We have established expertise in adapting methods normally used in physics and food science to measure digesta behaviour. Similarly, we are leaders in the field of spatiotemporal mapping, having developed software that can analyse video sequences of gut movement with high fidelity and resolution. Development of these techniques has led to a number of interesting discoveries, which are described in our publications.
