  • 1 Analyse and validate the kinetics of microbial inactivation for alternative food processing technologies with emphasis on pathogens of public health concern and emerging food-borne pathogens.
  • 2 Discuss and analyse the various unit operations (heating, drying, freezing, fermentation, membrane processing, etc), that affect food safety and food quality.
  • 3 Apply and analyse hurdle technology in the preservation of food safety and quality.
  • 4 Evaluate and critique emerging food processing technologies such as high pressure processing, pulsed electric fields, microwave and radio frequency processing.
  • 5 Evaluate and select natural antimicrobial compounds in the preservation of food safety and quality.
  • 6 Evaluate suitable packaging systems including intelligent and active packaging to ensure product food safety.
