Synthesis and Analysis of Libraries of Potential Flavour Compounds

Dr Bang investigated a number of potential flavour compounds for use in the dairy industry. There is a huge diversity of compounds in nature that contribute to flavour. Many compounds in isolation do not have the flavour or aroma attributes that they give to the food from which they were isolated. It is a goal of flavour chemists to identify novel flavour compounds that have the distinct characteristics of the natural food from which the parent compounds were derived. Dr Bang synthesised libraries of compounds and analysed them with modern technology. From the libraries, the potential for generating new flavour compounds was identified.
