Factors influencing mixing and mass transfer in the small intestine

The mechanisms and factors that could influence digestion particularly the processes of mixing and mass transport in the period after a meal have yet to thoroughly investigated.  From an engineering perspective, the small intestine may be understood as a complex chemical reactor.  ''State-of-the-art'' mircro-physics techniques and computer simulations were used to determine the physico-chemical properties of the intestinal fluid environment as well as they dynamics of villi in the small intestine and the underlying gut wall.  Novel features have been discovered that could lead to an improved understanding of the physical process of digestion that could ultimately contribute towards improved food and drug design.
