Structure and properties of tunable Pickering emulsions
Emulsions are complex mixtures of oil and water that can be prepared with a range of different stabilisers. Focused on emulsions stabilised by solid nanoparticles (Pickering emulsions), Mr Munro systematically varied the interactions between the droplets of oil in these systems with targeted chemical additions. The flow and yielding behaviour of these systems were studied through a range of rheological techniques. Mr Munro's research provides insight into the complex behaviours that occur within soft-material systems such as emulsions, while demonstrating how remarkably tunable the flow behaviours can be in Pickering emulsion systems.
