For the first time, Ms Roy investigated the digestive dynamics of non-cow milks, mainly focusing on their coagulation behaviour in the stomach. She showed that the structural changes in the milk matrix that occur in the stomach influences the rates of nutrient delivery. Her study has potential implications for designing bio-inspired food structures for optimal delivery of nutrients.
