Microstructural Analysis of Edible Plants: The Possibility of Designing Low Glycaemic Biomimetic Plant Foods

A current major challenge faced by food scientists is the development of innovative food systems for the prevention and management of diabetes and obesity. Biomimetics is an approach to the design of novel foods inspired by plant structures. Mr Do studied the microstructure of edible plants including legumes and sorghum. He found that the entrapment of starch granules within the cell wall and/or protein matrix imposes restrictions on starch digestion. Inspired by the natural plant structure, he designed starch-entrapped particles and demonstrated that these particles exhibited slow starch digestion properties. Mr Do’s research has provided valuable insight into the understanding of the structure-starch digestion relationship which can be used to guide rational design of novel low glycaemic biomimetic foods.
