Dr Juliana Leite MS, PhD

Research Officer (Food Digestion)

Riddet Institute

I am currently investigating the digestion of carbohydrate- and protein-rich food combinations using a dynamic in vitro gastrointestinal model. This research aims to better understand the breakdown of foods during the gastric and small intestinal phases, with the goal of optimizing nutrient release and absorption.

Key Areas of Study:

  • In vitro food digestion modeling

  • Protein and carbohydrate hydrolysis

  • Digestion of mixed meals

  • Gastric and intestinal phase interactions

  • Enzymatic activity and hydrolysis

  • Peptide release and bioavailability
